cooked a meal for 14 tonight

new year’s resolution: host people more often and cook.  menu for the evening:

  • starter: mexican chicken and rice soup
  • salad: caprese salad with fresh mozzarella, heirloom tomatoes, olive oil and vinegar
  • entree: baked chicken stuffed with pesto, pine nuts, and mushrooms with cacciatore salami and and provolone cheese to seal it in, drizzled with lemon
  • sides: steamed green beans and roasted pears with cinnamon
  • dessert: champagne-soaked apples, baked and glazed in caramel with vanilla and cookie dough ice cream
